Burundi is back on the menu for 2025, this year as State of Mind. Yamabiko has selected a natural lot from the Nkoronko cooperative, located in the hills of the Karusi province.
The coffee is very sweet, smooth and cake-like with notes of cooked berries, white chocolate, almond and vanilla. The aromas remind us of red velvet cake, in the cup we are getting impressions of white chocolate and berries with lingering sweetness and coating mouthfeel.
This year's release is less juicy than last year's Burundi release (Musubi). It has similar aspects to Yamabiko's previous release Frankie, and has less fermentation than their other African natural coffees. Will work very well as a single origin espresso or a filter coffee that is sweet and smooth with subtle fruit notes.
The Nkoronko washing station groups together several hundred small-scale producers in the hills around its washing station. These coffees are combined to make this lot.
Natural Processing:
Cherries from this batch are dried with their pulp intact. They are laid out on raised beds, allowing better air circulation. This process requires particular care to ensure uniform drying, which can take between 21 and 30 days, depending on climatic conditions. Prolonged drying on raised beds allows complex aromas to develop, often offering fruity, sweet and sometimes spicy notes, while retaining a natural sweetness.
